Linux does not use anything akin to graphics.h (but there's probably a compatibility library around; try searching on Freshmeat.net)
Instead, there are several (probably hundreds) of different libraries to handle different kinds of graphics GUIs, graphics, rendering graphics into ASCII-art and so on.
For drawing and manipulating graphics within a window (or fullscreen), I suggest you look at SDL (the simple directmedia layer).
For handling windows etc. (in C) I'd also look at GNOME.
Development libraries for both of these should be on your red-hat install disks. Also, please note there are many, many other options if these don't work for you.
