If you are already logged in as a normal user, start a terminal emulator like konsole and do "init 3" as root. To restart X, do "init 5". To get to text mode at every boot up, edit /etc/inittab and change the default runlevel from 5 to 3.

Are you using lilo as your boot loader? I borrowed the following from someone here as one of the entries in my /etc/lilo.conf file so that I can boot to a non-gui mode (usually telinit 3 is enough, but not after a kernel install):
Code:
image = /boot/vmlinuz
  root = /dev/hda9
  label = linux-non-gui
  append=init 3
  read-only
You should be able to pass init 3 as a command line option when you boot as well.

Edit /etc/inittab:
# Default runlevel. (Do not set to 0 or 6)
id:4:initdefault: - > id:3:initdefault:
