Right now I'm running a system with a quad-core Xeon @ 3.33 GHz and 8GB RAM. Although right now RAM is probably it's weak point, I've never had an issue running 5 or 6 VMs at the same time.
Given my VMs are generally not that heavy (Ubuntu probably being the heaviest), but my configuration here is more than enough to run 2 or 3 W7 VMs simultaneously and still have some wiggle room to do things like web browsing comfortably in the host.
My hard drive (dubbed "Fastest SATA Hard Drive On The Planet") is the biggest bottleneck.
