Video encode


I started using a software called projectX to demux pvr video files into mp2 and mpv files. I would like now to be able to encode these files into an mpg file with video and audio. This job is normally done on Windows with tmpgenc.
I can't find a similar software for linux.

Can anyone help? I tried to see whether I can use mencoder or ffmpeg, which is very powerful, but I can't seem to find my way through the millions of options.
