The man page for rpm covers this nicely

rpm -e *package_name*

Don't know if the mysql rpm created a user and will also remove it or not...I use the binary package from mysql.com

Also having this problem...

Installed from rpms and I know which version. However, simply uninstalling does not remove the root password for MySQL, which is my problem. The root password was set and all information that I can find on the web to reset it doesn't work.
