I bought a Dual proc. server and I am going to run redhat 7.0 on it. Is there anything I need to know to configure SMP for that OS?

look in the doc's that come with ure kernel source (SMP.txt I think) cuz it mentions stuff u shouldnt do, like run APM, then recompile kernel for SMP.
Theres bound to be a few apps that need a newer version/patching but the only thing I remember was to change "gcc" in the kernel source makefile to read "gcc -j3".
