If I were going to build a MythTV box I would start by using a preconfigured Linux distribution like KnoppMyth.

Seconded!
MythTV can be a nightmare to get working - Over the years I have tried several times, but have never managed to achieve even acceptable functionality.
I highly recommend you start with Knoppmyth or even LinuxMCE (Ubuntu 6.10 based), and allocate at least a week for solving problems. Things like the
ivtv module for TV cards are
highly dependant on your kernel version, and simply do not work if you don't get it just right. So, yes, if you change your kernel, you are likely to break MythTV - It's best to have a PC or at least partition that is
only for Myth.
In fairness to all the developers, TV standards differ markedly around the world, as do the tuners fitted to all the different USB / PCI cards, frequencies used, channels allocated etc. It is very complex, but linux support is getting better all the time.
Good luck!
