I use hplip with another HP printer, but I think the options should be similar. If I choose "Print" in an application I have to choose "Properties" in the dialog window. This leads me to a new dialog where I see two tabs named "Paper" and "Device" - on the "Device" tab I can choose "Printout mode" with options of draft, normal and high quality each in gray mode and color.
