Cutting with a Blender


I know this isn't the Blender forum, but does anyone know how to slice part of a shape off in Blender 2.28?

OK. ...now let me bang on it a bit more... I've yet to master it. I'm still fighting it agressively.

I don't have a point right there where I want to cut it. Can I still cut it? ...also, I may later have an irregular object that I want to cut a flat side on. How do I get a clean cut?
