Funnily enough, Hydrogen Audio told me to ask the Linux gurus. I was certain that if anyone knew how to do hi res on Linux it would be Hydrogen Audio.

A distro like Puredyne might do that naturally. Otherwise, I would say 8 channel audio requires Pulseaudio and fiddling with the default values and may be particular about the sound system it operates on.
The guy had to go into p[ulseaudio and set defaults, because hdmi doesn't know how many channels are there. What have you actually done to get this set up?
