Building a DIY email server for testing before building a virtual server

I have reviewed this process many times but have never had the ability to complete one. I always get hung up on the final settings whether it be DNS/SMTP etc. Just having the ability to have a functional email server at home to play with while I step up security and gain a better understanding of the in/outs of the software would be great.

I can currently build Ubuntu servers thru Virtualbox w/o any issues, plus I am using Virtualmin as an access panel for administration. Being able to finish one and understand the steps necessary for the final access from a Godaddy domain (pointing NS* to the server) would be great.
