Adding VPN clients on a Linux 10.4 shareserver

Hi everyone,
I'm a Windows admin. who suddenly finds himself supporting a network of Linux/Mac servers, so needless to say I have plenty of questions! First question: How can I change the outbound email(Zimbra VM)to a specific domain to only use TLS? Second question: When I try to add new vpn clients with "sudo vim /etc/ppp/chap-secrets" in cli I can put the name>pptp>chap secret>* but when I restart the vpn server the name etc. is no longer there. I'm assuming it failed to create the public/private keys since the name etc...disappears.
I didn't set this network up so I don't know exactly where everything is, does anyone know of some good mapping applications for Linux?
