Learning SSH
Hmmm, well, I will suggest getting a shell account if you are taking your first steps with ssh. Good way to learn how to use ssh without having to set up your network and troubleshoot before you know what you are doing.

I am not sure how all this falls under a Learning SSH title.
Having a local machine to fool with safely is good.
Good Luck.

http://www.openvpn.com

http://www.openssh.org

Both have decent documentation on how - less so on why. Having a real solid understanding of TCP would be a good place to start.
