Changing passwords - URGENT

Can someone PLEASE help me? I have had two technicians walk out of the company leaving me with 8 Linux servers. I have the passwords but need to have a step by step procedure to change them. Please help as soon as possible. I can connect to the server remotely.

Log in to the server as root, type:
passwd user name
and change it to what ever you want. You will not be asked for the old password.
