Where are the best Roll Your Own Linux Kernel Guides?

Ok, I'm ready to look into building a custom kernel, where are the good guides? I saw one a week ago, but know I can't find it.

I did a custom kernel for Ubuntu a while back, but I lost the ability to upgrade my system. Why? What did I do wrong or is that just how it works?
