I apologise if this isn't relevant but I need to choose a new wireless printer/scanner/copier and would welcome any advice please. I don't have unlimited funds and I need something that I can set up easily.
Apologies: I have a laptop running Linux Mint 18.1 Cinnamon 64 bit. Is that more use?

I would recommend you check HP printers. I have used three models over the last 10 years, the latest is a HP Envy 7155. Every distro I have tried (including Mint) just finds it and it all works fine.
Distribution: Debian Sid AMD64, Raspbian Wheezy, various VMs

I, too, found I could get an HP wireless MFD to work with Linux but I think it's worth searching the web for "Linux and <model number>" just to be sure.
I've had no problems with an HP Officejet Pro 8600...with any OS (since we still don't know what the OP is asking about).
It works plug-and-play with CentOS 7 + Cinnamon, iOS, Windows 10. Is connected via WiFi on my home network, every device on the network can see and use it.
