Most of the programs I use in linux are freeware...
And as the source codes of most of the programs are available to anyone, if a program is a spy/adware, it will most probably be found out... so... no worries for me... :P
As koyi pointed out, with the source of 90+% of linux software available, if someone tried to put spyware in their app, you'd hear about it here and the Linux community in general would drop it like a hot potato.
