If you have already finished the partitioning, you are through the hardest part. Ubuntu does a default install, that you can modify with apt-get when you are finished, The installer, while not pretty is easier to handle than Redhat in my experience.
Look over the ubuntuguide for the quick steps to get the most common stuff configured quickly.

It is likely waiting for something to assign it an address. Did it give you the option of configuring the interface manually? Are you using DHCP or static IPs? Stick it out, the installation is not pretty, but it is worth it.
