Doing kernel modification as an amatuer.As we are just beginning with it we want some simple modifications to implement.Generally a Linux Kernel consists of Open JDK and our target is to replace and embed it with Oracle JDK.We have searched and tried solving this problem ,but failed in it.It will be great if some one helps us in solving the problem in a step by step procedure.We have also come across 52 different .config files in the kernel 4.16 ,but are unable to understand which .config file to modify .

You have given us no useful information; wihtout it, we can't even GUESS as to how to help you. You say you want to modify the Linux kernel, to replace 'JDK', and you have failed. You don't say HOW you failed, what errors/messages you got, why you're doing this, etc. And we are not going to type up a 'step-by-step' procedure for you, when there are MANY you can find with a brief Internet search.
Compiling a kernel can be confusing...modifying it is MUCH more difficult.
In addition the JDK (Java Development Kit) is a collection of Java programming tools and applications. You can install and remove the JDK Depending on the distribution like any application.
