When I test php I always put this in the body of the phpinfo.php file:

<?php
phpinfo();
?>

Did you set the Document Root in php.ini file? Where did you save the phpinfo.php file? Did you install the apache php module. I don't use Red Hat but have seen some pretty good tutorials for LAMP servers online with Red Hat.

Clearly, Apache doesn't know how to handle PHP files. That's why it's returning your PHP code in clear text.

Try installing the apache PHP modules. And see that they're properly being included in your apache configuration file.
