You would install CentOS on VMware just like you would if you were installing it on a real server. You download the ISO file onto the VMWare host. Using the VMware console, edit the virtual machine settings. Select the cd-rom and click "Use ISO image" and then use the file browse to find the CentOS ISO you downloaded. Then power on the virtual machine. Then just a regular install.
