Have you tried using RhythmBox or gtkpod rather than iTunes in VBox?
I didn't have much luck w/ iTunes in a virtualised environment, in
fact it locked my VM up repeatedly.

I seems that I can't get the IPOD to mount in Fedora. I plug in a USB Harddrive and it mounts automatically, but when I plug in the IPOD nothing in Fedora. In Ubuntu, it mounts, RhythnBox will scan it and it beeps, but I can't do anything with it.
I have heard the itouch can be difficult. But I will share my experience with an ipod 3rd generation Nano 4gb.
I have the following relevant packages installed to make it work properly:
gtkpod
libgpod
podsleuth
ipod-sharp
That's with Fedora 14. I used the same packages with Fedora 12 also. Hope this helps.

I had qtkpod and bibgpod installed, installed podsleuth and ipod-sharp, now when I plug in the itouch it does beep, but still not being found by gtkpod.
It's got to be a mounting issue, but not sure where to look. Well back to surfing the net for another solution.
I have been in touch with a nephew linux/itouch user and he is going to get back to me when he can. I had worked with him a little back when he was configuring his but I don't remember all the steps we went through for that. Congrats on getting as far as you have, it's a great start.

Make sure you have libgpod version 0.7.90 or greater. Then do
yum install libimobiledevice libplist usbpmuxd
You already have gtkpod, you'll have to use that 'cause Rythmbox won't work because you'll have to use ~/ipod to mount the itouch unless you're root. Rythmbox apparently won't recognize any itouch repo except /media/ipod -- which can only be created by root. Let us know how it goes. The page I cited above is good reading.
Thanks SharpyWarpy that got me to where I can see what my problem is. I was able now to use gtkpod and get to the iTouch. I can now see my problem, I've got a 4th Generation iTouch with 32GB and the gtkpod version I have doesn't support it.
So now I'll have to find out when it will be supported.
The instructions on that page are good. I had every thing installed but needed some pointers to use them.
Okay Fedora 14 accomodates up to a 3rd generation iTouch 32gb, model C008. It could be you could use that. You'd have to upgrade. Fedora 12 will soon be end-of-life anyway, no updates. I'll check the Fedora 14 updates and see if gtkpod has support for 4th generation.
Does your ipod have a passcode. My fedora detected my ipod touch AFTER I disabled the passcode... I was playing around trying to get it to work execute ifuse and says you cannot sync data with ipod passcode protection enabled. (Obviously i executed ifuse in the terminal...) So try disabling your passcode.
