Multiple Eths?

I threw 2 more ethernet cards into my main for fun.
I now have eth0-2, and all of them pull an IP (at college, so they each have an external IP). Is there any way to designate each to do a different task? Designate eth0 for program 1 and 2, eht1 for program 3 and 4, etc?

Or for that matter, is there anything cool I can do with 3 ethernet cards, 3 unique IPs, and perhaps 1 very fast connection? =P

I have read about bonding, however it requires the other side to support bonding (as far as i know), which is bad, because im use my Univ. doesn't support bonding...

I also stumbled across these:
http://linux-ip.net/html/adv-multi-internet.html
http://lartc.org/howto/lartc.rpdb.multiple-links.html

Anyone have any experience with either of those?
