sure, sshfs will support it
essentially your files on the _server_ will appear as local files
assuming you are on a LAN you should be fine
however, if you are on a lan then samba might be easier
samba has the advantage of serving to devices such as tablets, without the need to root/jailbreak
sshfs should be more secure, and I think easier over a WAN, ( employing portforwards on router )
but, samba on a local network is probably what you need,
my backup server is not on my local network, its over internet from another country... My wifi internet, 450kb download, around 1mb upload... (backup server connection is 2mb/s up/down)
