Cool Basic Network layout help with MASQ please


Linux server running rh 7.1 dist. eth0 is DHCP and gets out to the 'net just fine. eth1 set to static and 192.168.1.1, can ping systems 2, 3, and 4 on 192.168.1.2-4 (all set static at this point).
The first goal is the switch over to Dynamic IP addressing so that guests can log into guest room port with DHCP and get out to check mail etc. That's step one.
Step two is, How do I set up MASQ to share the single IP address given to the server. I want to start with the most basic firewall rules to get up and running. Surely this is a complex topic and pointers to well done documentation is fine, but I am a little overwhelmed at this point.
