My friend has an old iPhone with a broken screen, and he told me that once he fixed it, he was going to install Ubuntu Mobile on it. I went to the Ubuntu website, but couldn't find Ubuntu Mobile. What is Ubuntu Mobile, and how, if possible, can I get it on an iPod touch? I saw a video where someone had full, desktop Ubuntu on his iPod; is this it, or not?

In June 2008 Ubuntu MID Edition 8.04 was released.[3][4]
Ubuntu MID Edition ended active development after 9.10 Alpha 6.[5]
The development of MID has stopped but Ubuntu continues to work on mobile distributions such as Kubuntu Mobile

Given the Release history above, please post a link to that video, if you can.
1st, I am going to assume that by "UME", you mean "Ubuntu MID Edition", & use those terms interchangeably.
The video is interesting, but only shows "Ubuntu 10.10 LTS" on the screen, no mention of UME.
The author's comment, also does not mention of UME:

I finally managed to install Ubuntu on my iPod Touch 3rd gen. Yes the iPod is jail broken so don't ask. In my last video where I ran Windows XP on my iPod touch people complained it was fake because i didn't use my finger...so i did this time. But a stylus like a pogo stylus is more precise.
You're assuming that this video proves that he installed UME on the phone. Read the comments & if you think it's real, try to contact him to find out how.
The Release history I quoted clearly says that there is no current UME image to be found:
