I found this by way of the Arch Wiki, might help point you in the right direction: https://github.com/cb22/macbook12-spi-driver

Very simple, work in progress input driver for the SPI keyboard / trackpad found on 12" MacBooks (2015 and later) and newer MacBook Pros (late 2016 and later).
(edit) And here is an Ubuntu-specific tutorial I found for you (Mint is based on Ubuntu): https://nixaid.com/linux-on-macbookpro/

I can't personally vouch for either solution; so proceed with caution.

On that second link you posted, there is a link to an iso called ubuntu4mac. It's working ok now. I have no sound, no bluetooth, but I do have a keyboard and the trackpad mostly works (I haven't figured out how to right-click yet or if I can).

It's a work in progress. Hopefully I'll get it going well.
