you just unchecked sendmail in Runlevel 5, but sendmail is still activated when your in Runlevel 3, thats why when you start init3(runlevel3) sendmail still runs...

Do
chkconfig --list (redhat)
for checking whether sendmail is there on runlevel 3
remove the entry of sendmail by
try
ntsysv --level 3
and remove sendmail(by pressing space)
And finally comsomer welcome abroad

for future reference, when comsomer said "C + M + Shift + bascksp" the C & M refer to Control and Meta (the "windows" keys)
