Hello! I am in search of free/open source software that I can use to run an automotive repair business.

Don't know of anything specific for you, but...

We would also like to include barcode scanning. We want to scan parts and have them removed from inventory and automatically added to a customer's invoice.

In general, people pay (primarily) a database programmer to set up exactly what they want for their business. This is probably not the best thing to do
if
i) you can find something close enough to your requirement to use it as is
or
ii) adapt your process
or
iii) configure something that you can find (say, a general accounts package that allows you to book parts in and out) to be satisfactory for your requirements.
As you sound like a small business (probably a start-up), rather than an offshoot of Mega-corp Inc, you need to be very careful about your investment to get this working. This has cashflow implications, particularly if you choose something that has 'teething problems', as computer systems often do.

Lastly, I am wondering if thin clients would be a smart way to go.

In principle, thin clients have a number of advantages; low power consumption, reduced hardware costs, centralised admin. In practice, getting something that works (quickly) from a cashflow point of view ought to be your main focus.
