Reminder: I don't know squat about postfix...
Can't postfix be configured to respond with the same IP/hostname that's reflected in the MX record?

Yes but am not familiar with how to do it. Will eventually get a test domain and test all this. Always have to be careful messing with mailserver because primary responsibly is running my business and managing my hires but attention to detail leads to spending way too much time trying to setup ideal infrastructure when what have works fine and nothing that do has anything to do with computers.
