Meson

I'm late to the party. But what packages are switching to meson that would push
the building suite up to LFS?

Good question, I was asking myself the same thing. It adds libffi, python3 and ninja to the LFS-book.

The question was about "Why was meson added to LFS book", not why it is needed. For what you mentioned, it could've been added to BLFS, much like cmake and any other build system thing.
