I tried searching but please point out if I missed anything.
I know I can install linux to a usb drive even w/o usb boot (which is my situation). The point being to load the kernel on a bootable device and point it to the usb disk.
My question is am I going to run into problems building it that way using LFS LiveCD for the "host system". is it better if I make a partition on the hd? I don't want to because I have a very small hd (6GB).

If I understand correctly, you want to put your LFS kernel in the /boot directory on your 6GB HDD and the remainder of the filesystem on your USB disk. That's no problem and the LiveCD would work fine as the host system.
Building it on the USB disk and moving it should also not be a problem. But, why not just build it directly on the hdd? A base LFS system will easily fit in 6GB.
Oh, duh. It's all clear as mud now. Anyway, yeah put /boot on the HDD and build the rest of the LFS system on the USB drive. No problems. I have a CLFS built on thumb drive, but keep the kernel on the HDD. Basically the same thing you're trying to do.
