Customizing a Debian-based Distro

Hello!
I am looking for a method to be able to "remaster" a distro for a computer recycling/donation project. The most important part is an almost completely automated installation using preset parameters (one or two clicks, not a full ncurses or gui setup program). I also need to be able to change the packages installed by default. It would be nice (though not required) to add my own branding and change some of the artwork.
I would strongly prefer to use Debian as a base, though this isn't absolutely required.

Does anyone know of a method or application that would allow me to do this? It doesn't have to be point and click, but it has to be easy enough for me to be able to document it for someone else to do in the future.

Thank you all so much for your help!!

Are you aware of the Debian Live Project? They offer customisation scripts at just about every level, but you'll have to dive into it to use them to their full potential. The installer's the standard Debian installer, though - not just point and click, then (even if the new Lenny installer's a lot nicer to look at).

gNewSense also offers scripts to fully customise a gNewSense or Ubuntu based distro - I'm not sure if it'll work for Debian, too.

Finally, Debris Linux has a simple custom installer, and customising an installed version's really a breeze. We may even be able to offer a customised version tailored to your needs if you can give us precise descriptions and requirements of what you need. (Note: Right at this moment, the webserver seems to be down - should be up again in the not-too-distant future).

Edit:
Just found this: Ubuntu Customization Kit

Thanks for your response.
I'll take a look at Debian Live. It will indeed take some diving in!
