as he didnt answer, ill ave a go at it.
some apps like BIND allow u to change name, version or other responses from a configuration file. If thats not the case (and it isnt with http servers AFAIK) u peruse the source and look for a definition like #define VERSION = "(Name, version)"
and change that. be carefull tho, some usage of $VERSION might be for internal checks or like that...
Best is to add one, like
#define VERSION1 = "Glenfiddich-1.0"
and where it (sorta) sez printf($VERSION) make it look like printf($VERSION1). enter the compile, check, change cycle :-]
