Establishing an IRC server

I am planning to set up an IRC server so that some friends and I can chat without my having to resort to joining Facebook. The server will be running Debian Stable, that much is sure, but I don't have much of a plan beyond that. Any thoughts and/or advice would be very much appreciated.

Pick whatever ircd program is available in your distro. Run it as a user with no access to write files. Ensure access requires a password. Any other details should be in the documentation.
