If you look in /boot/grub/grub.conf you will see entries for each of the installed kernels. You can delete the lines for 2.6.10-1.760 . You will also see a line with default=x. The different entries are numbered from top to bottom starting with 0. Just put the correct number in for x and that will be the new default. When you are back running the kernel you want, you can go into /boot and delete the config, initrd, system-map, and vmlinuz files that correpsond to the 2.6.10-1.760 kernel.
You can also use yum to uninstall kernel packages if you installed them from an rpm.
By the way, you need to be root or do sudo or su to do all of this.
