Seeing which services are running on debian and identifying which I can remove

I have successfully installed a version of Debian on an NSLU which is a mini file server which can be flashed with the ARM version of debian. I had no problems with it when it was running 'etch' but since I moved to 'lenny' it seems to be more prone to running out of it's limited memory of 32MB RAM. I want to see which services are running so I can judge what to remove. I've read that either sysv-rc-conf or rcconf will do this but don't know what to delete and from what run level as it presents me with a matrix of options for services such as avanchi etc.
I've already taken steps to reduce memory usage such as move from ssh to dropbear. Any other recommendations would also be very helpful.
Would someone be able to help me determine what services are running and which I can safely stop to free up resources?
All I need the NSLU to do is act to:
run ssh for remote admin
run an nfs server
run a samba server
run a cups server
I am able to do this quickly on my gentoo box but the world of debian is new to me.
