what desktop environment ?
now since i use fluxbox and not KDE nor GNOME directly i am going to try and remember this, but to my knowledge i think all you have to do in either environment is open the "Menu Editor"
and i think its in the Utilities menu in KDE
and in the Settings menu in GNOME ...

people that actually use these environments can probably confirm this but i am pretty sure thats where that are and thats all that needs to be done ...

In KDE there is a program called Kmenu? --menu updating utility and it can be found under the settings or utilities section of the start (K) menu.

I use Debian installed thru a Knoppix LiveCD. My KDE menu has a program called Kappfinder, in the "Settings" submenu. It finds all the installed programs that are not on the menu, and allows you to put them there if you want to. Once you have them all there, you can use Menu Editor (which on my system is also in the "Settings" submenu) to move them into folders that are more intuitive for you.
