Yes it will do that with the partitioning. It can use the remaining free space, a whole drive you specify, delete all partitions and start from scratch, etc. The only issue I have has to do with my bios. I have three SATA's and one IDE. The bios says the IDE is the first in the order. Some distros see it as first, others as last. But like I said that has to do with the way the bios is.
As far as booting. Yes. It will set up a Windows boot option, that never failed me. Now getting BSD and Linux to play nice is another story most of the time, lol.
Edit:Ubuntu is now using Grub2 if you run into problems or just want to check out the doc's on it..
