Again, How? I can easily create a ISO of a directory, but getting the list of packages I need and creating the package lists for synaptic to chew on I don't know how.

My own, it's a html document with lots and lots of link and a disclaimer up front that it is totally unneeded. Linux is a child of the 'net and as such there are gigabytes of info on subject, just ask Google.
My aim is simple...
1) Give Windows users the mind altering experience of realizing how vastly bigger a thing Linux is compared to Windows.
2) Introduce them to the various views of Linux, as radical Movement (GNU), as a Kernel, as Distribution, as a File System Layout (LSB), as Philosophy, as an Attitude, as a Culture (bazaar / Noosphere), ...
3) Give them pointers where to start reading.(eg. Rute, LDP, LPG,...)
4) Make sure they understand the "Free Software" as "Free as in Freedom" software.
In the second session I go into hands on howto appropriate / tailored to the individuals in the class.
