Questions befor Install of Ubuntu

I am running on an AMD 64bit processor duel booted with suse 10.1 x86_64 and windows XP. Im still pretty new to linux and trying to find a disto that best fits my needs. After a little bit of research iv found that there are some packages that are not offered to the 64 bit platforms being that the technologies are still fairly young. My question is can i install and run a kernel like 686 instead of Intel's x86-64 images or will this cause some problems?

You can install a 32-bit version of Linux and it will run fine.

I'm dual booting a 64 Bit and 32 Bit version of Ubuntu 6.0.6. I recommend that new users run 32 Bit Ubuntu on their x86_64 machines. To be honest the 32 Bit version is my default boot and I use the 64 for experimentation.
