I'm happy to announce that I have found an rpm file to install mumble on RHEL6 or CentOS 6. It is provided by li.nux.ro, and you can add their repository easily:
It also stuck the murmur.sqlite database file in the root of the main partition.
Basically, if you open the /etc/murmur/murmur.ini file, create the directories that are in the config but not present, move the sqlite file to the /var/lib/mumble-server folder it will work.
Still more convenient than building from scratch, because if you add this repository, and epel it will grab all the dependencies needed. That by itself made it worth the little bit of time needed to figure out what was wrong.
Also make sure that after making the required paths to chown -R them to the mumble-server username that the package created or make a new user etc...
