Does anyone know how I could change the default font that is displayed on the desktop?

this is a window manager issue, not a redhat issue.. you didn't tell us what your window manager is, kde, gnome, fluixbox, icewm, xfce, windowmaker or what... but there'll probably be a pretty little control center somewhere on the larger ones.
