Question help removing install customisations RHE3

I have a version of RedHat Enterprise 3 that has customisations to the default install routine.
I would like to remove the customisations so I can install using the default routine.
The media has also been modified to remove unnecessary packages & I would like to be able to add back in all available packages.
I already have all the src.rpm's and have been looking for a guide/howto to follow.
So far none that I have found have enabled me to remove all customisations.

Well, it seems to me there is no way to remove the customizations unless you know what they are.
Can you not get stock media to install from?

It would be nice to know where and how automatic installs can be modified.
I have removed kickstart scripts and there is an alteration to the firstboot sequence but I need to find and remove any other customisations.
What I really need is some pointers in where to look.

No. I don't have the original media; previous employee managed to make them vanish. I'd prefer not to shell out for new media seing as how we have already paid once. For me the effort to rebuild is less than the cost of repurchase.

I also need to know how to add back the missing rpm's from source.rpm's and to reset the gui install to default so it lists all available packages.
