NTFS fragments quite severely, and files' fragments tend to be scattered all over the disk. The 5% reserved space gives the ext2/3/4 space allocator room to work, and makes it likely that even if a file is fragmented, the fragments will be close by. The 5% reserved space has nothing to do with the filesystem's stability or robustness.
