In addition to the concise answer on the different flavors, there is the difference on which ones you kind of have to pay for and which you can get free - at least I think.
I do not see where you can get the SOHO edition except as a beta. Can anyone explain that to me. If you pay for the annual subscription to download from MEPIS, they exclude the SOHO edition in the fine print.
Then they tell you to get it from Tau, but they do not seem to have it. I personally am very confused. I want the soho edition, and have no idea if I have to pay for it, or how much it is, or if I have options that provide support, like Mandriva and SUSE do.

SOHO will only avaliable via the subscription ftp, however currently it is a beta and based off debian stable. it is not intended as a desktop system so i do not recommend it for that.
Mepis lite is still a kde system but instead of some resource heavy apps like open office they use lighter alternatives, such as koffice.
if you want a complete desktop system I recommend SimplyMEPIS
