I guess dumping my FAT32 partition was pretty cool and afterwards letting linux rule my notebook.
Making people say "Hey, that (desktop) looks groovy/nice, how did you do that" and then telling them it's linux, seeing the impression on their faces has been pretty cool too (several times).
Ok so far its playing dvds, running dvdshrink through Crossover office, burning dvds with my brand new NEC 6500a and getting hibernate to work on laptop (finally!) Next Im gonna try wireless with a Netgear MA521.
The coolest thing/s i've done is: Setup an Intranet at home, setup my own internal Chat server (jabber), setup my Silc server, setup my Webserver (apache), setup my Shoutcast streaming server and best of all kicked Windblows into touch :-)

Pure eye-candy. Its what i've been trying to do with windoz for the last 8 years.
I still use windoz because of work....but one day

setting up a YP domain
dual head spanning (matrox/ati)
using xcplay to show my mp3 playlist on every screen in my room even my palm pilot
using a 20x4 character lcd as a clock/mp3 spectrum analyzer
setting up samba and backing up my mom's files onto the samba server
sharing files with a legacy mac with netatalk
Configuring my Kernel and completely installing Gentoo from stage 1: Every time I do something new in Linux I learn so much more about computers. This was especially informative.
Learning Perl: It's not the greatest language in the world but it's good for small things around my computer and regular expressions own all.
90% of my 512MB ram free: Running XMMS, Fluxbox, and Xchat-2 all at the same time. It's so great to use /sysinfo on Xchat to brag about it to all the windows users.
Every time I'm able to break the software barrier set up by M$: Whenever I get one of the good programs that isn't ported to work on my Linux box I feel all happy inside.
Joining the community: The Linux community is so great to be a part of. Everyone helps out everyone and people actually know what they're talking about. If you have a problem on an M$ box, not even their tech support can actually help you... The Linux community is just the best in the world.
One of our employees left and changed the admin password on an XP box and didn't tell us. The CEO needed the computer ASAP and the files on it. I found a linux bootable 3.5 disk online that was able to reset the admin password on the XP box. People were amazed at that, mainly because it only took a minute to complete.
Also I ride a commuter train to work (40 minutes) and people always ask how I get windows to look that way or act that way on my laptop. When I tell them its linux they are usually shocked. This is when I hand them a live cd and explain how to try it at home, I have only done this twice. What is a live CD they ask, I think they thought I was crazy but its a great conversation starter. Its just cool to see people begin to see other options for their computers and opening the door to that whole new world.
