Multiple Monitors : one for the Guest and one for the Host

I have two monitors running from a single graphics card. Can I assign one to the host system and the other to a guest. And which of the virtualization systems will enable me to do this (If any)
Many thanks

Why not just create two separate screens and run the virtualization software on one of them?

Thanks Adam, I think I had a "doh" moment ;-)
Of course what I do is move the window containing the VM to one monitor and then set it full screen.
