"can anyone explain what exactly vmlinuz does?"

vmlinuz is the Linux kernel. Exactly what the kernel does is a very lengthy topic. I suggest that you read this book:

To be a little more specific, vmlinuz is the compressed image of the kernel. It gets uncompressed, loaded into memory, and executed at boot.

and so technically by "Linux Kernel" you can just read "Linux" seeing as linux is nothing but that little file and any other modules. all this other stuff that you would call "Linux" is actually GNU software and such like, not Linux at all.
