What FTP and What mail Server should I install?

I just signed up for a godaddy virtual dedicated server and this is actually my firt time using a unix based system.

I ran into a few bumps at first and I am still working them out. The first bump is that the server is using OS Fedora C4 and godaddy never installed YUM with the server. So I spent a ton of time figuring out how to do that.

Now that I have that taken care of I want to install a simple FTP server that will allow me to use my windows xp machine to transfer files and set permissions on directories and such. So I installed vsftpd and will probably set that up tonight but I was wondering if I should use ProFTPD instead. I was told vsftpd is more secure out of the box.

The real purpose of this post is to figure out how I am going to be handling e-mail for my domains. What software is available and what is the easiest to setup. What type of mail clients are available for viewing my mail from a windows machine or the internet. I would like to get the effect of having my mail delivered instantly to my personal computer while it is being managed from a remote linux server. If this is not possible than the next best thing would be a web interface which is light weight(fast) and not buggy. So what are my options here?
